 Marinated Sardines

Preparation Time: 1 hour

Marinating Time: 3 days

 

Ingredients:

1 kg sardines (anchovies)

200 g coarse salt

200 ml vinegar

Oregano

3 bay leaves

½ l olive oil

 

Gut anchovies, remove their heads and clean thoroughly under a running tap.

Then in an earthenware (or glass) dish with a tight fitting lid layer the anchovies. Continue with layers of salt, fish, vinegar and tightly seal the dish with its lid.

Leave in the fridge to marinate for 12 hours.

Clean the anchovies under a running tap and carefully open them. Remove fishbones.

Use the same dish to layer the anchovies alternating with layers of oregano, olive oil, fish, garlic, bay leaves and olive oil.

  • The marinated anchovies keep fresh in the fridge for up to 2 months.
